Boozy Watermelon Granita
5 cups | seedless watermelon, cubed |
2/3 cup | Tito’s vodka |
1 tbsp | granulated sugar |
1/2 cup | freshly squeezed lime juice |
2 tsp | lime zest |
2 tbsp | finely chopped mint |
mint leaves to garnish |
Instructions
Add the watermelon, vodka, sugar, lime juice, lime zest, and chopped mint to blender carafe. Turn blender to high and process until smooth. Pour the mixture into a 9x9 metal or ceramic baking pan.
Transfer pan to freezer. After about 30 minutes, scrape the granita mixture to begin making a crumbly shaved ice. If mixture has not begun to set yet, allow for another 15-30 minutes in the freezer before scraping.
Return pan to the freezer, scraping again every 30 minutes until the entire mixture is frozen.
Divide between glasses, garnish with fresh mint leaves, and enjoy!
